 Sjoeblom Winery is creating a new tradition in 2002, a new sparkling wine, unlike anything else in the world. We call it Chauvignon and it is made of 100% Cabernet Sauvignon grapes. Sparkling wines and Champagnes are traditionally made from Chardonnay, Pinot Noir and/or Pinot Meunier.  Chauvignon is a Blanc de Noirs with a brilliantly light, coral tint to its otherwise white colour. We make this sparkling wine according to the traditional French method. It is fruit forward with the distinct freshness of the Cabernet Sauvignon grape. We regard it as one of the most spectacular champagnes in the world. Chauvignon Sparkling Wine Cabernet Sauvignon, Napa Valley This is a pink-hued blanc de noirs made from Cabernet rather than Pinot Noir. It’s bright and fresh, with pretty citrus, raspberry, cherry, toast and herb flavors at the fore. Clean and zippy on the finish, it’s full and round. Shows that fine bubbly can be made outside its normal varietal parameters. — J.M. (12/1/2003)
Mr. Richard Juhlin, is a renowned authority on champagnes from around the world. He was the first foreigner to be dubbed Knight of Champagne and holds the world record for the number of Champagnes tested. Mr. Juhlin is also the author of many award-winning books and articles about Champagne, he has written widely on the history and culture of Champagne. 2000 Chauvignon Reserve: "This is something I've had in mind for a long time! Why not create a sparkling wine from the most classic of grape varietals? The color is indistinguishable from a fine Champagne-region Pinot Noir. With exemplary bubbles that fairly boast of its lineage as a Cabernet Sauvignon, the character of the varietals is immediately apparent from characteristic flavours of currant, leather, mint and iron. The taste is full-flavoured, fruit-forward - with a crisp finish, the subtle vestige of the grapes' tannin. An excellent sparkling wine - and if Sjoeblom succeeds in removing the stamp of warm weather and just add a hint of toast, we will have a true cult wine." 2001 Chauvignon Reserve: The style of the 2001 Chauvignon Reserve is brilliant. The Cabernet Sauvignon is now showing its characteristics in a clear and wonderful way. Its Bordeaux like spectrum of flavors presents leather, cassis and juicy, California opulence. This, in combination with an appealing color of partridge eye and a beautiful mousse, and balance, makes this a world class sparkling wine, produced outside the district of Champagne. The Cabernet Sauvignon does not show any buttery flavours found in white wines and there is a hint of tannins in the aftertaste. |
